The Swan Pub, a part of the estate, was a 17th century coaching inn with sawdust on the floor and a bakery that served simple food for farm workers who stopped in after a long day working in the fields. Today, it is an ivy-covered cosy village pub with Cotswold stone walls, comfy sofas, log fires and locally sourced dishes. The menus change regularly in accordance with the seasonal produce sourced from the kitchen garden and farm. Dishes include Curried Parsnip & Coconut Soup and Hake fillet, Palourde clams, agretti and fennel.
There are also two Cotswold stone courtyard gardens (designed by Bunny Guinness) overflowing with flowering hawthorns and roses.
“Thyme is a restored historic Cotswold manor and farm. It is a family story where a passion for the land, food and entertaining, merges with a love of local heritage, beauty and conservation. We took time to make Thyme. Working with the historic buildings and the land that surrounds them, we have created a thoughtful place with love and attention lavished on every detail. We hope you will experience a real connection to the land, the seasons and to nature, and we invite you to rest, relax and enjoy this English country idyll that our family call home.” Caryn Hibbert, Founder & Creative Director
